I've been making these cookies for several years now and they are always a hit. I adapted the recipe from a Martha Stewart recipe....she used unsalted butter, then added salt, which I always think is silly. She also used corn syrup for the chocolate ganache which I think is unacceptable, you don't need to use corn syrup ever to make something delicious. Let me know what you think. A Votre Sante!
INGREDIENTS:
10 tablespoons (1¼ sticks) butter, divided
½ cup confectioners' sugar
1 teaspoon vanilla extract
1¼ cups unbleached flour
2 ounces semisweet chocolate (about 1/4 cup)
DIRECTIONS:
Preheat oven to 350 degrees F. In the bowl of an electric mixer fitted with a paddle attachment, beat together 1 stick of the butter, sugar, salt, and vanilla on medium-high speed until smooth, about 2 minutes. Beat in the flour, beginning on low speed and increasing to medium-high. Using a small cookie scoop or heaping teaspoons, roll the dough into balls, and place 1-inch apart on a baking sheet. Bake for 10 minutes, remove from oven, and make an indentation into the middle of each cookie. Return to oven, and bake until light brown on the edges, 7 to 9 minutes more. Remove to a wire rack to cool.
Combine chocolate, 2 tablespoons butter Set over a pot of simmering water; stir occasionally until melted and smooth. (Alternately, you can microwave the mixture on 50% power in 30-second increments, stirring after each, until completely melted and smooth.) Allow to cool slightly. When cookies are cool, fill the thumbprints with the chocolate mixture.

My thoughts on turning 43...
Yesterday was my birthday, yay....happy birthday to me! It was also the first day of school which for me is sad. My husband and kids made sure that I woke up to roses, cards, and chocolate, it was very sweet. Then I did the usual and made breakfast and lunches. After the kids left I sat down with my coffee and cried a little. When the kids were in elementary and middle school I looked forward to them going back, now not so much. It's different now that they're teenagers/adults...I miss them when they're gone more, I really enjoy hanging out with them and their friends. Ten years ago, I couldn't for the life of me imagine getting to this point but here I am.
Anyway, after a good workout I met three of my friends for lunch. I am so incredibly blessed to have Godly women in my life, people who love you no matter what, that is a precious gift. I ran some errands and picked up a cake at Costco, which was amazing (Chocolate Tuxedo Cake)! Christian and some of his friends were here, along with my girls and they sang happy birthday to me before the guys had to leave for football practice. Tomorrow I'm going to TAPS with my mom for dinner and next week meeting a couple of friends for dinner at Citrus City Grille.
One of the things I've been thinking about is how at this age it's weird to me that some people I know from high school are having grandkids and some are having babies. In 2.5 years my kids will all be graduated from high school, Jade will have graduated from college and on to grad school. She's moving next month to downtown Riverside and starting school at UCR, I'm really proud of the woman she's become and the challenges she's overcome.
The end of the month starts football season and it will be the last year for Christian, as he's a senior! Crazy. Pretty soon it will just be Mackenzie at home, then on to being empty nesters.
I am really really blessed. I have a wonderful family, friends that are like my family (probably closer), I'm in good health and pretty good shape. I used to be worried about aging and getting older, now not as much (of course I still have my days, who doesn't?).
All in all it was a good day, hoping for a great week, month, year! Happy Birthday to me! :)

How coffee and hot cocoa can improve your health
Let me start off by saying I don't want to necessarily talk about the benefits of coffee or chocolate (there are plenty, I'll let you look that up on your own). I want to talk about using coffee or hot cocoa as a delivery system for an amazing supplement called Ganoderma Lucidum.

Recipe of the week: Triple Layer Brownies
These are by far the most decadent thing I make, therefore I don't make them very often. I've been making this for several years now, and over time have modified the recipe a bit.
The original recipe called for unsalted butter in the brownie layer, but as you may recall, I'm a big fan of the sweet and salty thing, I use regular butter. If you use unsalted, you'll need to add 1/4 tsp of salt. Since there is only 1 cup of flour you could easily make these gluten free by using almond or coconut flour, or whatever else you might use. I also reduced the amount of unsweetened chocolate in the glaze to just 2 oz instead of 4. (You can use the 4 oz if you like, or even try semi sweet.)
I made these today for my oldest daughter's 21st birthday. We will probably have them with some vanilla bean ice cream, if I get to the store. These also go well with coffee or an after dinner coffee cocktail. Cut them into small pieces, I'm often told these are too rich....which there is no such thing, in my book, haha! Triple Layer Brownies
Ingredients:
1 cup of butter + 3 Tbsp
8 oz unsweetened chocolate
2 cups sugar
4 large eggs
1 cup flour
1 cup flour
3 tsp vanilla
2 cups powdered sugar
1/4 cup heavy cream or half and half
For the 1st layer:
(Preheat oven to 300 degrees)
Melt together (in a double boiler or the microwave):
1/2 cup butter
6 oz unsweetened chocolate, set aside and let cool slightly
Beat together for 8 minutes (you want this fluffy) on medium-med/high speed:
2 cups sugar
4 eggs
Fold chocolate mixture into egg mixture. Add by folding 1 cup of flour and 1 tsp vanilla. Bake in a greased 9x13 pan for 30-35 minutes or until toothpick comes out clean. Let cool completely before frosting. (You can always do this the night before.)
Frosting:
Melt until a caramel color, approximately 7-8 minutes on medium low heat:
1/2 cup butter
Beat the butter with 2 cups powdered sugar, 1/4 heavy cream and the remaining 2 tsp of vanilla. Frost brownies while the frosting is still warm then cool to room temperature.
Glaze:
2 oz unsweetened chocolate
3 Tbsp butter
Melt together and pour over frosting. You can serve them as is or cold. I usually serve them cold, they're a little easier to cut when cold. They freeze nicely. Enjoy with ice cream, coffee, or a coffee cocktail!

Recipe of the week: Chocolate Pumpkin Smoothie
This time of year pumpkin is in everything including smoothies. I had some left over pumpkin after making this recipe for a crustless pumpkin pie. I love pumpkin chocolate chip cookies so I thought I'd try combining the two flavors in a smoothie and this is what I came up with. 1/4 canned pumpkin
1 scoop chocolate protein powder
1 Tbsp unsweetened cocoa powder
1 Tbsp chia seeds
dash of cinnamon
ice (optional)
Add everything to the blender until ice is blended and enjoy.

Recipe of the week: S'more Cupcakes
I love s'mores, they are hands down one of my favorite desserts. I've looked and looked for a recipe and couldn't find one that I liked, so I had to improvise. Last year I had dinner at a restaurant in Los Angeles called The Six, they had a very rich version of a s'more and I wanted something along those lines, not your typical milk chocolate thing, so this is what I came up with.
The taste is every thing you remember from the campfire, only without the campfire and a tiny bit more sophisticated. Let me know what you think. A Votre Sante!
S'more cupcakes
Graham cracker crust (base)
1/3 cup melted butter
1/4 cup sugar
1 1/4 cup graham cracker crumbs (I used Trader Joe's honey graham crackers)
Cupcakes
You can use any chocolate cupcake recipe or boxed mix you like this is my favorite recipe. I didn't have any unsweetened chocolate, and I try to use what I have so I used 3 oz (approx 1/2 cup) dark chocolate chips and added 2 Tbsp of unsweetened cocoa powder. Since you have the graham cracker crust you have to fill them a little less, you can probably make a few more, I think I made an extra three, just fill the empty spaces with water so they still bake even. Bake as directed or until a toothpick comes out clean.
For the top:
I wanted to use what I had, which was large marshmallows, more chocolate and the left over graham cracker crust. So instead of letting them cool, I cut the marshmallows in half, the first time I tried it I used 2 and 1/2 marshmallows which was too many because they slid off in the oven....second time around I used 1 1/2. Put them back in the oven, set to broil and watch them closely. I think mine took all of 4 minutes until they were golden brown. While they're in the oven melt another 1/4 cup of dark chocolate (about 45 seconds in the mircrowave). Once they're out, drizzle with about 1 tsp of the melted chocolate and top with a little bit of the leftover graham cracker crumbs. Let cool for at least 30 minutes. Voila, s'more cupcakes. Enjoy! I took them to a Fourth of July party and they were a hit!!!
This was attempt #1 with more marshmallows, I said I needed to work on the presentation....both were equally yummy so as always, play with your food, and let me know what you think!

1 cup unsweetened almond or coconut milk
1/2 cup frozen cherries, berries or a combination of both
1 Tbsp unsweetened cocoa powder
1 scoop chocolate protein powder (optional)

Recipe of the week: Post workout smoothie
I love smoothies and tried this combo a couple of weeks ago when I had finished a monster leg workout at the gym followed by a Bodyrock.tv workout. Research suggests that chocolate milk is a better post workout drink than almost anything else. Last year when I was trying to help my son put on some weight for football every night after practice I made him something like this minus the nut butter and he gained 20lbs of muscle and 2 inches in about 8 weeks. Let me know what you think, I think this one tastes like everyone’s favorite candy…peanut butter cups. (I usually use almond milk but you can also use coconut milk, when I make them for my son I use 2% milk).
8 oz milk
1 scoop protein powder (whatever your favorite is)
1 Tbsp unsweetened dark cocoa powder
1 Tbsp peanut butter (or almond butter)
a hand full of ice
Blend in the blender until its frothy and enjoy!

Recipe of the week: Chocolate Covered Strawberries
What's better on Valentine's day than chocolate covered strawberries. They are so much easier to make than most people think. I really should have posted this earlier...if you still want to make them for later, it doesn't take that long, about 30 minutes is all. Use the best strawberries and chocolate you can find. Ingredients:

6 oz (1/2 a bag) semisweet, bittersweet, or dark chocolate

Line a baking sheet or cookie pan with waxed paper or foil.
Wash the strawberries and pat dry thoroughly with paper towels; set aside. You want them room temperature so if they're cold let them sit out for 3o minutes or so. Make sure the strawberries are completely dry. Even a drop of water in the melted chocolate can cause it to "seize" and turn the entire mixture into a grainy mess.
Using one of the below methods, melt the chocolate chips:
Double Boiler:
In the top of a double boiler over hot water, not boiling water (don't let the bottom of the bowl touch the water, melt chocolate, stirring until smooth.
If you don't have a double boiler you can improvise one by placing a glass or stainless steel bowl over a pot of simmering water (don't let the bottom of the bowl touch the water).
Microwave Melting Chocolate:
In a microwave-safe bowl, melt chocolate chips for 30 seconds then check and stir. If you need more time, do it in 10 to 20 seconds intervals (check and stir after each addition of microwave time).
Remove the bowl from the microwave and stir the chocolate until completely melted. Baking chips and baking chocolate may appear formed and un-melted after heating but will become fluid after stirring.
How To Dip Strawberries in Chocolate:
Grasp the stem or green leaves of the strawberry and dip into the chocolate and swirl in chocolate to partially cover. Give the strawberry a little shake as you withdraw it from the chocolate (this will fill in all the cracks and leave a nice even line of of chocolate at the base.) When the strawberry is completely withdrawn from the chocolate, swirl it in a quick, clockwise motion to let the excess chocolate drip off. Place on the prepared cookie sheet. Repeat with the rest of the strawberries.
Put strawberries into refrigerator and allow the chocolate to harden, about 30 minutes.

Recipe of the week: Candy Bar Cookies
What are you going to do with all that leftover Halloween candy? Make cookies of course! This recipe calls for mini Snickers bars but I'm sure the snack size cut into 3 pieces would work. You can also use Milky Way, Reeses, Baby Ruth, Twix....whatever you like. I don't make these very often because they're not very healthy, but once in a while won't hurt. Enjoy!
Candy Bar Cookies
1 cup softened butter
1 cup creamy peanut butter
1 cup sugar
1 cup packed brown sugar
2 tsp. vanilla
1 egg
3 cups flour
1 tsp.baking powder
1 tsp. baking soda
60 snickers miniature candy bars
chocolate glaze (recipe below)
Directions:
Preheat oven to 350 degrees fahrenheit. In large bowl beat together margarine or butter, peanut butter, sugar and brown sugar until fluffy. Add egg and vanilla. Combine flour, baking powder and baking soda then add to peanut butter mixture, beat until combined. For each cookie shape a rounded Tbsp of dough around a candy piece, forming a ball. Place on an ungreased cookie sheet. Bake @ 350 for 15 mins, cool on rack. After they're cool drizzle with glaze.

Recipe of the week: Chocolate Cupcakes with Chocolate Buttercream Frosting
I don't eat a lot of sugar these days, but once in a while I want something sweet. I like cupcakes but I think that boxed cake and canned frosting is gross. Once you've had cake and frosting from scratch you won't ever want the boxed/canned stuff again. My philosophy is that if you're eating healthy 80% of the time, then a little chocolate and sugar won't hurt from time to time. I hope you enjoy this. A Votre Sante!
For the cupcakes:
1 cup whole wheat flour
1/2 tsp baking soda
1/2 cup butter softened (1 stick)
1/2 cup sugar
1/2 cup brown sugar
2 eggs

3 ounces unsweetened chocolate, melted
1/2 cup buttermilk
1 tsp vanilla extract
Preheat oven to 350 degrees. Mix the flour and the baking soda in a bowl and set aside. In a double boiler melt the chocolate over low heat. In a large bowl, or stand mixer, cream the butter until smooth. Add both sugars and beat until fluffy, add one egg at a time, mixing well. Add melted chocolate and vanilla. Add half the dry ingredients, then half the buttermilk, repeat, until the batter is smooth but not overmixed. Spoon batter into 12 cupcake liners. Bake for 20-25 minutes or until toothpick comes out clean. Cool for at least 20 minutes before frosting.
Chocolate Buttercream Frosting
6 Tbsp butter
1 cup powdered sugar
5 Tbsp unsweetened cocoa powder
1 cup powdered sugar
5 Tbsp unsweetened cocoa powder
1 tsp vanilla
2-3 Tbsp milk
2-3 Tbsp milk
Cream butter, add sugar, cocoa and vanilla to the butter. Add milk to the butter mixture. Slowly add milk one tablespoon at a time until you have the desired consistency. Enjoy!
